Buying and storing premium beef

The experience begins before cooking: product information, temperature control, packaging, receipt, refrigeration, freezing and use-by dates.

Three stages that determine a good purchase

Storage starts before you open the box. A minute spent checking each stage avoids improvisation once the order is at home.

Before ordering

Check the format, weight range, estimated date, transport method, storage instructions and procedure for reporting problems.

On receipt

Check the box, ice packs or cooling system, packaging, labels and whether the contents match the order before storing it.

Before storing

Decide what you will cook soon, what needs freezing and how you will avoid contact with ready-to-eat food.

From delivery to refrigerator

Prepare refrigerated space before the order arrives and always follow the specific instructions on the label and from the supplier.

  • Check the delivery conditions and, if the supplier specifies a range, verify the temperature on receipt. If you have any doubts about the cold chain, do not consume the product; contact the seller.
  • Check the product, weight, batch, date and conditions stated on the label.
  • Refrigerate the beef without delay at between 0 and 5 °C, in the lower part of the refrigerator and inside a container.
  • Separate raw beef from ready-to-eat food to prevent cross-contamination.
  • If the pack is swollen, has lost its vacuum, smells unusual or gives you cause for doubt, do not taste the product; contact the supplier.
  • Defrost in the refrigerator, never on the worktop, and follow the label instructions.

Refrigerator, freezer and dates

The date and packaging format determine how long each cut can be stored. Do not apply a generic period to every product: the label and supplier's instructions take precedence.

If you plan to freeze the beef, do so before the stated period ends, protect it properly and note the date. Once defrosted in the refrigerator, cook it within the recommended period and do not refreeze unless it has first been cooked safely.
